Easter eggs - island style
These no bake, low sugar Easter eggs are a great alternative easter treats for the kids!
INGREDIENTS :
3/4 cup crunchy Island Style Peanut Butter
1 cup Friends Fiji Dessicated coconut or coconut Flour *
1 teaspoon honey or sweetener of your choice
250g fijiana Dark Chocolate
* We have used other brands of dessicated coconut for this recipe, for best results we recommend blending or grinding to a finer ‘flour like’ consistency
Directions :
In a large bowl combine peanut butter, coconut and honey.
Mix well.
Shape mixture into balls roughly one inch in size.
Place balls on a lined baking tray or flat surface and shape into ‘eggs’
Pop into Freezer to set while you prepare the chocolate
Melt chocolate.
You can add a touch of coconut oil to the chocolate to make it nice and glossy.
Using two forks dip your Peanut Butter eggs in the melted chocolate, place back onto lined tray, Ready to decorate.

Remember if you would like your toppings to stick to your egg you will need to do this before popping your eggs back into the freezer to set.
Keep refrigerated or Frozen!
