PEanut Coconut Cookies
Ingredients:
1 Cup Island Style Crunchy Peanut butter
1/4 Cup melted (rewa!) Butter or coconut oil
1/3 cup Brown Sugar
1/3 cup white sugar
2 Eggs
1 Cup flour
1/2 cup desiccated coconut
1 teaspoon baking soda
1/4 teaspoon salt
DIRections:
Cream peanut butter, butter and sugars.
Add Eggs and beat gently until incorporated.
In a new bowl sift flour, salt and baking soda. stir in coconut.
Add creamed butter and sugar to dry mix and combine. do not overmix!
Refrigerate batter for one hour.
when ready to bake - Heat oven to 180c
Roll in one inch balls and place on lined baking tray.
flatten with fork in a cross pattern.
Bake in oven for 10- 15 minutes or until golden around the edges.
let cool on tray.
fill up the biscuit tin!
